In autumn garlands of sweet corn hung outside to dry festoon houses on the Black Sea coast. Used as animal feed further south, dried corn is a dietary staple on the Black Sea: ground for breads and cracked or left whole to add to soups and dishes like dible, a buttery pilaf of cracked corn, kale and collard greens.
